Leftovers Don't Have to Suck

We three bachelors are doing okay while Alexis is in Florida with her mother and twin aunts. I was going to grill some hot wings & potato skins tonight for the basketball games but thunderstorms and hail dissuaded me.
Looking around, I had some leftover grilled chicken, some tomato cream sauce I had frozen from a prior recipe, a few onion/poppy seed rolls, and a pint of grape tomatoes. So I made what Trevor called "Chicken Spaghetto".


I put the grape tomatoes on a pan and mixed them with some olive oil, salt, pepper, and fresh chopped basil.

I popped them in the oven at 400f for 20 minutes and then set aside in their juices.

While that was going on I cooked 8 ounces of angel hair pasta, thawed the frozen cream sauce, and let the chicken sit out.

I mixed the hot noodles and tomato with the sauce and chicken. Seasoned it with salt, pepper, and some more basil. Letting that sit for about 10 minutes was enough to warm it through. During that time, I used the rolls to make some garlic/mozzarella toast.


Not bad for using leftovers.
