Easy Chicken Paprika

Before I write about the food related stuff, one of the things I like to do every now and then is the One Minute Writer. Every day they give you a topic and you're supposed to write about it for 60 seconds. Sixty seconds flies by fast.

I thought today's OMW was food related: What good thing could you have too much of?

My response: Circus peanuts, plain and simple. They are my favorite candy as a kid but damn, they could make me sicker than a trash eating dog! I never knew which would get me first, the artificial banana flavoring or the sheer quantity of that thick marshmallowy [BEEP time up].

So why the heck was an orange candy peanut flavored with banana anyway? It doesn't make sense when you think about it.

Anyway, here is a very simple dish that we found on BigOven a few years ago. It works in a pinch and the boys have liked it each time we made it. Far from gourmet but it is perfect for "middle of the week cooking from what's in the pantry night".

Easy Chicken Paprika
Easy elegance: Browned chicken is added to a creamy mushroom sauce enriched with sour cream and seasoned with paprika and red pepper.

1 tablespoon Butter or margarine
4 Boneless chicken breast
1 can Cream of Mushroom Soup
2 teaspoons Paprika
1/8 teaspoon Ground red pepper
1/3 cup Sour cream

Heat butter in skillet. Add chicken and brown on both sides. Take chicken out and place into a greased casserole dish. Add soup into skillet along with paprika and ground red pepper. Heat to a boil. Cover and cook over low heat 5 minutes. Stir in sour cream and then pour over chicken. Bake for 30 minutes at 350 covered with foil.

Serve with spatzle or buttered noodles.

Like I said, easy comfort food.

  1. Lol! Love the cartoon :D My too much of a good thing would be beans. I am not going to subject you to an explanation of why this is so, suffice it to say that too many beans in my system makes for potentially embarassing social situations ;)

  2. I'm still giggling about the "dad" peanut comment. What did you say about chicken? Oh ya...easy, midweek. ya....looks really good!! seriously it does. I swear! it even looks all pretty :)

    As for the recipe, I've bookmarked it because it looks so delicious and exactly like something I would totally make over the winter.

  4. First. I hate those orange "peanuts" inside and out.

    Second. I admire the 60 second game. I write fast and with out second thought. So it could be a very valuable exercise for me.

    Third. Sure this chicken is orange. But did I miss the point?

  5. You know, I love popcorn at the movies, and I will continue to eat it until I am sick. I just love it, but I can't eat it after for a bit. But the next time I'm at the cinema, bam! I do it again.

    PS: What are circus peanuts? A candy? Never seen them.

  6. Ribs, I can have too much of ribs, when I hit em right, I will eat until I can't.

    That does look pretty simple, and the paprika should give it a kick.

  7. I can't believe you liked those circus peanuts...they always grossed me out.

    What I could eat way too much of - ONION RINGS. Not the store bought kind, but homemade, panko crusted, onion rings. I love them dipped in ranch and ketchup - yum!

    This chicken dish does indeed look simple, hearty and comforting - my kind of food.

  9. The dish looks great but what really made me smile is circus peanuts! I LOVE them, but your right they can make you very sick if you eat them in large amounts. ( like the whole bag) Yes, my self control goes out the window with them!

  11. Oh I am with you and dad would buy them, and now my son eats them...a family 'sick' tradition indeed :) The chicken sounds very one of those hillbilly books I have picked up lately, of course...kidding!

  13. Circus peanuts....*shudder.* The smell alone makes me gag, and I don't even know why! I used to like them as a kid, too. Maybe I had too many of them. I could eat way too much pizza and sweets. Your chicken looks awesome! Simple but delicious.
