Fourth of "Que-ly" Weekend

The air conditioning company came out to replace our air conditioner at 8 this morning. I figured if I was going to be up, I might as well start cooking. I smoked a 3 lb chuck roast to have for sandwiches whenever this weekend and a 1 lb fattie (smoked breakfast sausage) to go with some french toast (Sorry, Brandi.....I know you wanted to be here!)

Rubbing the fattie with a 50/50 mix of Billy Bones Competition and XXX Cherry rubs.

Look at the smoke ring on that fattie. This doesn't even taste like the same meat as pan fried sausage.
The beef chuck roast had a nice smoke ring too and great flavor but it wasn't as tender as usual. Oh well.
It still made for great sammiches!


  1. I've smoked sausages before, but never a Chuck.. I like the "beefy" flavor of chuck and use it in my competition chili... Well, time to get my smoker ready...chickens are flavor brined overnight (water,brown sugar,Kosher salt,orange juice, and a little hot sauce!) and the ribs were dry rubbed and slathered last night too.. Always a bit nervous right about now! Have a great 4th!

  2. Hey Chris, that chuck roast looks ridiculously good...and the smoke sausage? Fantastic! I'm going to have to try and recreate that in my backyard.

    That sandwich looks great!! I made a chuck roast things weekend too - in the oven though. It made some slammin empanadas for the 4th~!
