Book Cook: Diva Q's Slashed Potatoes with Chipotle Aioli

I found these two gorgeous USDA Prime, Certified Angus Beef® Brand ribeye steaks, and I wanted to come up with a side worthy of the steaks.

I've had people ask me if I get special treatment from the butchers at Food City because my steaks always look so good.  The assumption is that the butchers hold the "good stuff" for me.  While I am friendly with Justin and the team, almost every steak I cook on here was bought straight out of the meat counter.

I went to my bookcase, found this recipe in Danielle Bennett's Diva Q's Barbecue, found this recipe, and knew it was "the one."  I did a full book review when it came out in 2016. Filled with almost 200 lip-smacking recipes and loaded with grilling tips, this book should be in your BBQ library.


When I slice Hasselbeck potatoes, I put chopsticks on both sides of the potato as a guide to keep me from inadvertently slicing all the way through the potato.

Bacon Gouda Cheeseburger

If you follow any burger threads on social media, you know that the trendy thing is towering stacks of half a dozen smash burgers, dripping with cheese.  They look amazing, but for me, they are over-the-top.  I'm not a snake with a jaw that I can un-hinge at will.  

This burger is simple and doesn't look like much.  It doesn't even have a shred of lettuce.  But this was the best burger that I have had in the past couple of years.  It's a straightforward ground chuck patty, a seasoned slice of tomato, grilled onions, aged Gouda, mayo, toasted bun, and sorghum-bourbon bacon.

Grilled Ribeye Steak with Rosemary Garlic Butter

It's no secret that ribeye is one of my favorite steaks.  Then again, so are porterhouse, NY Strip, flank, a good sirloin, and tenderloin.

This is just a quicky and not really a recipe post per se.  Steaks are so easy and delicious that they are often a weeknight meal for us.  This was one of those times. 

I am a daily or almost daily shopper.  My dinner process often starts on the meat aisle at Food City where I see what looks good.  Then I build my meal around that.  On this particular day, they had a beautiful pair of USDA Prime, Certified Angus Beef® Brand ribeye steaks.

My appetite isn't as voracious as when I was young, so Alexis and I usually split a ribeye.  That also lets us have steaks 2 nights in a row, so that's good.  The trick is making sure that you split both the eye (longisimus muscle) and cap (the spinalis) evenly because the two pieces have different textures to me.  I want some of both!

I seasoned the ribeye steak with the Santa Maria Rub posted online at Certified Angus Beef Brand's website.
My prep process for quick ribeyes is simple.  I wipe it with high-temperature cooking oil (canola, peanut, or avocado), season it, and let it rest at room temperature for at least an hour.  This day I used the Santa Maria Rub recipe from the Certified Angus Beef® website.

Szechuan Pepper Steak

Have you ever used Szechuan peppercorns?  They are interesting in that contrary to what you might think, they aren't spicy black pepper or chiles.  Even more twisted, they contain a chemical named hydroxy-alpha-sanshool, which creates a slight numbing effect.  You can take advantage of this anesthetic effect by pairing it with spicy heat. 

That's what we did with this Asian inspired Szechuan Pepper Steak that Alexis and I cooked this weekend. The Szechuan peppercorns bring a flowery, almost citrus flavor, and Garlic Chile Butter adds luscious spiciness.  Of course, we cooked it on a grill, but you could absolutely do this on a stovetop.

In late October, I was fortunate enough to be a judge at the Jack Daniels World Championship Invitational Barbecue.  "The Jack," as it is known in the BBQ competition world, is one of the premier contests.  It is like one of the Majors in golf or Grand Slams in tennis.

Beef Back Ribs with Chimichurri on the Big Green Egg

The gauchos of Argentina knew what they were doing when they paired grilled beef with chimichurri.  The pungent flavor combination makes my mouth water every time.

This past weekend I found a nice rack of beef back ribs and decided to make the Beef Back Ribs with Chimichurri from my new book, The Offset Smoker Cookbook (Ulysses Press).  The only difference was this time, I used a Big Green Egg instead of an offset smoker.  Everything in this book can be cooked just as easily on a kamado instead of an offset.  The full recipe details are in the book but you can probably figure everything out from the details given here.

Types of Beef Ribs

I need to do an entire post about different types of beef ribs, but for today's purpose, I'll generalize and say there are two types of beef ribs (there are more). 

  • Beef Short Ribs - Cut from the Plate or Chuck primals, beef short ribs eat like brisket - luscious and beefy.  We smoke them whole, but in the grocery store, you'll see them trimmed down to half-sized individual ribs or flanken-style (Korean).  They are big, take a long time to cook, and a single rib will feed 1 to 2 people.
  • Beef Back Ribs - These are the rib bones that you see on a bone-in prime rib.   Beef back ribs are the leftovers once the butcher breaks a whole ribeye down into a boneless roast or ribeye steaks.  Naturally, these eat more like ribeye steak.  They LOOK big when you buy them, but they will shrink down quite a bit.  Back ribs are scrappy little things but still delicious.  Count on 2 bones per person.

Honey Bacon BBQ Pork Chops

Matt Pittman of Meat Church is like a mad scientist playing with his seasonings.  Once again, he has proclaimed "It's ALIVE!" and rolled out a limited edition rub - Honey Bacon BBQ.


As the name would imply, this BBQ seasoning has the salty/sweet honey profile of Honey Hog and the smoky/bacon flavor of Bacon BBQ seasoning.  It comes out of the gates with a punch of flavor and finishes strong.

The day that I received my free sample from the Mad Scientist himself, I just happened to have a nice pair of Heritage Farms Cheshire Pork.  So I took the easy road and grilled these killer pork chops along with some grilled zucchini and couscous. 


I patted the chops dry, lightly rubbed them with oil and gave them a moderately heavy coat of Meat Church Honey Bacon BBQ.  Then I let them rest at room temperature for an hour so the rub could start acting as a dry brine - pulling the flavor into the meat.

I preheated a large Big Green Egg to 400°f.  The set up was direct heat with GrillGrates in place.  I grilled the chops for about 5 minutes per side (with a quarter turn halfway through each side) and brushed them with a glaze of stock, honey, and several pinches of the Meat Church Honey Bacon BBQ.

Ribeye Steaks with Cajun Butter

I'm a big believer in the fact that quality beef doesn't need much more than salt, pepper, and a bit of fire to make a brilliantly tasty steak.  But I'm also a believer in the truth that sometimes you have to shake things up a bit.

I had gone to Food City to buy some chicken, but I saw this pack of pretty Certified Angus Beef® Brand ribeye steaks sitting in the meat case, just taunting me.  I had to buy them, it was a matter a principle. 


I felt like being a little wild with them, so I planned to hit them with some Cajun seasoning and finish them with a Cajun compound butter.

Beef Filet and Pineapple Skewers With Pepper and Onion Stir Fry

Grilling food on a skewer is popular around the world and you can find examples of it in almost every culture.  Whether it is Middle Eastern shish kebabs, Japanese yakitori, Greek souvlaki, Brazilian rodizio, or African sosatie, grilling on skewers is fast, convenient, and tasty.

There are grills specifically made for skewer cooking but it is easy to build your own by using fire bricks to make a trough 10"w x 12"h x however long out of fire bricks.  For me, skewers are easy enough to do on any gas or charcoal grill, I don't think you need any special equipment other than a bag of bamboo skewers.

5 Tips for For Easier Skewer Grilling

  1. If using bamboo skewers, soak them for 30 minutes before using them to keep them from burning.
  2. If using metal skewers, buy the flat blade style instead of round.  It will hold the meat in place better.
  3. When using round skewers, use 2 skewers parallel to each other through each kebab to keep the food from spinning.
  4. Put your meat and veggies on different skewers so they can cook the appropriate length of time.  When you cook meat and veggies together, you'll often end up with under cooked veggies if the meat is cooked correctly or overcooked meat when the veggies are cooked right.
  5. If using wooden skewers and a lot of excess skewer is sticking out, either wrap foil around the exposed wood or just trim it off closer to the food. 

Regardless of which flavor profile I choose or which grill I plan to use, I always start with quality beef, preferrably, Certified Angus Beef from my local Food City.  I think their quality control standards and grading make their beef consistently better than the other selections available to us.  

Here is a recipe that we made this week using the "scraps" from a whole beef tenderloin that I was trimming in to a center cut roasts.  At your butcher, they might sell these as "tenderloin tips".

The sweet, slightly earthy, and spicy glaze brings out the best in the pineapple and the beef.  Using tenderloin for kebabs is a little expensive but I promise you that these are some of the most tender kebabs you'll ever eat.

Strip Loin Grilling Class at Mannix Pools and Grills

The class was in Florida. Since it was the same week as July 4th, I was worried I might have a hard time finding enough strip loins for the class down there.   So before we left Knoxville, Jeremy at Food City #674 helped us get 3 Certified Angus Beef whole beef strip loins.

Does Certified Angus Beef really matter so much to go to that effort?  I mean, Walmart carries Angus now, why not just buy it at the Walmart down there? 

Because not all Angus is Certified Angus Beef.  It's not just a label that sets C.A.B. apart from other Angus programs, it's what is behind that label.  I am a big believer in their 10 quality specifications.

Quick Camping Trip to Norris Lake

We did a quick 1 night camping trip at Norris Lake a few weekends ago to test out our truck tent and to see how Ramsay would deal with camping.

The tent is fitted to the truck, so it pops up in the bed. The plus side is you are sleeping a few feet off the ground, making it less likely for ants, snakes, and creepy crawlies from bothering you. The down side is that you have to break camp if you need to drive anywhere.

We stayed on the East side campground and it was nice because it wasn't crowded at all due to vacancies.

Our site's previous occupants left us a stake on the grill.  Not sure if this was a meant as a pun   (steak/stake on the grill) or if they made this for self defense against nearby Sasquatches.

Bacon Wrapped Pork Tenderloins with Bacon Gravy

One of the posts that Char-Broil asked me to develop was something "bacon inspired".  

When brainstorming that one, I thought about how many recipes you see that are "bacon wrapped whatever".  It always sounds good but the execution is usually lacking and the bacon comes out half cooked.  

That made me think of a horrible entree that I was served at a restaurant a few months ago.  It was "bacon wrapped pork tenderloin medallions, smoked and grilled".  I had this dish at the same restaurant once before and it was pretty good.  The second time though it came out like this [restaurant name withheld because they generally have made decent food].

That's funny....I don't recall ordering "oh hell no". 

Before the server could put the plate down on the table, I was hit with a strong smell of foul smoke.  The pork smelled like someone trying to light a wet bag of charcoal briquettes.  I'm pretty sure that they had a grease fire while "smoking" them.  The bacon was rubbery, barely even cooked.  

So I decided to do a spin on that dish.  I used Chef Adam Perry Lang's high/slow technique that he does for bacon wrapped beef filet and adapted that for pork.  That made the bacon perfectly cooked.  To complete the dish, I served it with bacon gravy because....bacon.  

No soggy bacon or dirty smoke here.

Sriracha Orange Sauce for Grilling, Stir Fry, and More

It has been Sriracha sauce week this week (March 7-13).  I'm sorry I didn't get you a greeting card but I got you this delicious grilling, stir fry, and more sauce instead.

For the Sriracha sauce, we just used the popular Rooster sauce by Huy Fong.  You can see that trademark red bottle and green cap in the background.


I was instantly inspired for this sauce at breakfast a few weeks ago.  It's All So Yummy Cafe in Knoxville is our favorite locally owned sandwich, soup, and ice cream place.  Their grilled sandwiches are amazingly good, their soups made from scratch, and their ice cream flavors are creative.  A few weeks ago they started opening for breakfast and Alexis got the Big Orange Stacker.

It's a tower of homemade buttermilk biscuits, avocado, swiss cheese, fresh tomatoes, fried egg, crisp bacon, and an orange sriracha sauce.  I reached over to her plate and dabbed my pinky into the sauce for a little taste.  Damn, I never knew my pinky finger tasted so good. I came home and whipped up this version of the sauce that afternoon.

This sauce is powerful with bold sweetness, a sharp citrus twang, and the mild complex heat of Sriracha.  This sauce is fantastic brushed onto grilled chicken or shrimp in the last few minutes of cooking.  I think it would work on pork tenderloins or BBQ ribs for something different.  It is dynamite mixed with a little soy sauce and tossed with stir fried chicken for Orange Chicken.  I even used it to make a bright citrus vinaigrette.  

We have tried 5 different brands of orange marmalade for this, from Smucker's off of the shelf to small batch versions that have to be mail ordered.  For off of the shelf, Smucker's worked better than the more expensive gourmet brands at the store.  But the hands down winner for this recipe was Sarabeth's Blood Orange Marmalade.  It has a much more organic texture, you can actually pour it, compared to pretty much all of the rest that are gelatinous marmalades that you have to spoon out of the jar.  The major difference was taste, the sweetness seems more natural from the oranges than added sugar.

I couldn't wait to try it so I grilled a couple of chicken breasts on the BGE Mini-Max kamado grill.  It was excellent, exactly what I was looking for.

This past weekend was gorgeous and Springlike, so I rolled out the Kettleman grill to do some "old school" grilling like when I first started barbecuing.  

A kamado grill is my preferred weapon of choice so people are sometimes curious why I use different grills, if the kamado grill is really that good.  In business there's a saying that if the only tool in your toolbag is a hammer, you treat every opportunity as a nail.  Same with grilling, I like to use a variety of grills because:
  1. it challenges my skill set,
  2. it helps me keep an open mind,
  3. it helps me connect better with my audience - only about half are kamado users, the rest are using kettles, gas grills, and such, 
  4. and most importantly, sometimes I just feel like it.  

Sponsorships?  Sure, it's nice to have them but I have used a variety of grills (Brinkman SnP, Brinkmann Professional Charcoal Grill, Smoke Hollow gas/coal combo unit, and more) since the start of this blog and long before sponsorships were rolling in.  

I used about 1/2 chimney of briquettes.

I made a simple rub of 1 tablespoon salt, 1/2 tablespoon Lawry's Seasoned Salt, 1 teaspoon granulated garlic, and 1/4 teaspoon dried parsley.

I spritzed 3 boneless, skinless chicken breast halves with spray butter and then seasoned them with the rub.  The butter acts as a binder for the rub but also oils the meat to help prevent sticking and get a nice crust.

I arranged the coals in a single layer and left room for an indirect area.

My target for grilling chicken breasts, whether grilling on a kamado or kettle, is in the 350-400°F.

If I'm doing thick breasts (not butterflied), I typically do about 6 minutes per side directly over the hot coals.

After 12 total minutes, I brush them with the sauce on both sides and then shift the chicken to the indirect area that is not directly over the coals.  I close the grill lid and let them finish cooking until they hit an internal temp of 160°f.  That's usually about 10 minutes.

Since we were putting this chicken on salads, I let them sit for 15 minutes or the hot meat would wilt the lettuce and veggies.

We had sauce leftover so I decided to whisk up a vinaigrette for our salad with the sauce.

Sriracha Orange Vinaigrette
1/3 cup Sriracha Orange Sauce
1 tablespoon rice wine vinegar
3/4 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon sriracha sauce
2/3 cup olive oil

Mix together the sauce, vinegar, salt, pepper, and Sriracha.  Slowly drizzle in the olive oil while whisking vigorously.  Or briskly.  Whatever your whisking style is, just do it fast and the oil slow.

We put together a salad of mixed greens and Swiss chard, onions, avocado, Mandarin orange segments, homemade bacon, and rice noodles.  Then we sliced the chicken breast and topped that with the vinaigrette.

I still call this bunny rabbit food, but it's damn good bunny rabbit food!

Sriracha....BEER?
Also, did you know that there is a Sriracha beer?  Rouge Ale and Spirits has brought to market a Sriracha flavored stout beer.  The tell-tale rooster and green cap are a nod to Huy Fong's brand of Sriracha sauce.

I like beer but I'm not sure that this one is for me.  I mean I'd try one if you had it in your fridge but I wouldn't go out of my way to buy one.  How about you - would you try it?
