You must think that I messed up with the "over easy potatoes", right? Nope. We call these Over Easy Potatoes because they are skillet-cooked Honey Gold potatoes tossed in butter and Over Easy Seasoning. So. Freaking. Good.
Over Easy Seasoning
Over Easy Seasoning is one of Girl Carnivore's exciting new collab with Spiceology. Kita is a culinary bad-ass. I had the pleasure of getting to know her at the Grill Talk event at Certified Angus Beef HQ in 2015 where she and Clint Cantwell (Grillocracy) beat my team in the small competition that we had for custom burger grinds. Our group had a blast* learning and laughing at that event.

Her cooking rocks and this seasoning is no exception. Fragrant and flavorful with dill, tomato, garlic, lemon, and more, this seasoning is way more than "for eggs". Like someone commented on a post of her's - instead of Over Easy, they should have called it Over Everything. It gives these potatoes a flavor explosion. It would also be fantastic on shrimp, chicken, and it's a natural for salmon.
Big-time flavor!
Grilled NY Strip Steak
This was simple but delicious. I seasoned a USDA Prime Certified Angus Beef NY Strip from Food City with Fat Henry's Classic Rub. It's an espresso-based rub so I thought it was perfect for breakfast. I grilled it direct for 4 minutes a side with the Big Green Egg running at 450f.
How can you go wrong with this team?
Big Flavor Tip: If you aren't already doing this, season your cutting board before slicing steaks. Here I minced a clove of garlic and mixed it with more Fat Henry's and the drippings from the resting steak.
The Fat Henry's Classic helped build a nice crust on the steak.
Over Easy Potatoes
These nuggets were crispy and mouth-watering. Alexis and I each probably had a half dozen for "quality control purposes" while the steak was finishing. I couldn't help myself, I kept wanting just one more.
Ingredients
2 tablespoons beef tallow or other high temperature cooking oil
2 cups diced honey gold potatoes, soaked in water to remove starch and then dried
1 tablespoon butter
1 tablespoon Girl Carnivore Over Easy Seasoning
Instructions
Preheat a grill to 400f. Place a cast-iron skillet in the grill 4-5 minutes before starting.
Add the beef tallow or oil, add the diced potatoes, and toss to coat.
Cook until the potatoes are tender and golden, about 10 minutes, tossing or stirring every few minutes.
When the potatoes are tender and golden, add the butter, Over Easy Seasoning, and toss or stir them to coat. Remove from heat.
I wait to add the seasoning until the last minute or so because I don't want the herbs to burn.
So darn good....
Over Easy Eggs...Over Easy
I preheated a skillet, cooked the eggs over easy, and then seasoned them with Over Easy Seasoning. 'nuff said.
The whole dish came together very well for an amazing breakfast to kick off the weekend.
I should have bought the bigger jar...this stuff is fantastic.
