BBQ Brisket Sloppy Joes

After the Rocky Top BBQ Cook Off last weekend, the Big Bob Gibson Team had to high tail it back to Decatur, AL.  They had almost the full flat from their Snake River Farms waygu brisket leftover and couldn't take it with them.  Hoss asked if I wanted it.

Did I want it?   Damn he's funny!

After enjoying it for a few days and there was only a pound and a half left, I wanted to try something different.  After toying with a few ideas, I thought I would make a brisket sloppy joe.

BBQ Brisket Sloppy Joes

Prep Time: 20
Cook Time: 30

Ingredients (6 sandwiches)
    You'll need
    • 1.5 lbs leftover BBQ brisket
    • 6 kaiser or onion rolls
    For the sauce
    • 2 Tbsp butter
    • 1/3 cup diced yellow onion
    • 1/4 cup diced red bell pepper
    • 1/4 cup diced green bell pepper
    • 1 Tbsp minced garlic
    • 1/3 cup ketchup
    • 15 oz can tomato sauce
    • 2 Tbsp Worcestershire sauce
    • 1 tsp kosher salt
    • 1 tsp chili powder
    • 1/2 tsp ground black pepper
    • 1/4 tsp cumin
    1. Preheat a medium saucepan over medium-high heat.
    2. Saute the onion and bell pepper until just turning translucent, 5-7 minutes. Add the garlic and saute another minute or so until it turns golden.
    3. Add the remaining sauce ingredients. Bring to a simmer and cook 10 minutes.
    4. Meanwhile, shred or finely chop the leftover beef brisket.
    5. Fold the sauce into the chopped brisket and cook another 5 minutes.
    6. Serve on toasted rolls.

    The brisket will shred easier if warmTo do that, I put the brisket slices in a dish, pour 2 cups or so of simmering beef stock over them and quickly cover them for 10-15 minutes while I make the sauce.  That gently warms the beef.

    I also added a 1/4 cup of this liquid to the sauce when it was done.  I figured that it couldn't hurt.

    Toasting the buns is important because it keeps the buns from getting soggy plus it adds texture.

    Alexis and Trevor DEVOURED these.  The mixture reheats well for lunches at work (leftover leftovers) and it holds well over low heat for a while too.   That makes it ideal for when you have a bunch of people over for a game, you can just keep it in a crock pot on warm and people can eat throughout the afternoon whenever they get hungry.

      Seriously though, I need leftover brisket in my life. ASAP. Don't you want to move to AZ and be my neighbor? I'm a huge fan of leftover leftovers too. These sloppy joes look great.

      In this particular case a crockpot is an acceptable tool for making BBQ Brisket Sloppy Joes. Because the brisket was already smoked you do not risk losing your BBQ Man Card.

    7. Chris- there's no doubt in my mind this is mindblowingly awesome. There is a food truck down here in S. Fla that makes a Jerked DR. Pepper Braised Brisket sandwich that is the best brisket I have ever had. I mirror Mary's sentiments, I wish I was next door, I would invite myself over!

    10. mmmmmmmmmm and love the sprinkling of Fritos. Really nice photo Chris. I have not had Fritos in years and last weekend at a BBQ my friend Cauleen set out a big bowl of them, today I just bookmarked a Rachel Ray Southwestern Sloppy Joe that's topped with jalapeno slices and Fritos.... and now you. And man are they good.

    11. I over-cooked a brisket a while back and ended up chopping it. It was plenty good that way, but I wish I'd thought of the sloppy Joes. Yours looks and sound delicious.

    16. Yum! I've had some good brisket, and I've had some bad brisket. I know yours would be outta this world! Warming it in that simmering beef stock is such a good idea. I could never think of these things.

    18. Really good! I love sloppy joes and we had just the right amount of chopped brisket left, I added a little bit of deli mustard, otherwise followed the recipe, it was a hit!
