We had a little of the Pasta E Fagioli leftover from last night. I put it in some ceramic boats and topped it with some shredded Spinach, Artichoke & Pepper Jack Cheese. Any cheese would work but that is what we had. I sprinkled some "Italian Seasoning" on them and baked them for 20 minutes. Then I broiled them for 4 minutes to get a golden brown crust.
Yeah, that wasn't half bad for leftovers.
Great idea and one I've never thought of. We like pasta fagioli and this is a great way to use it as a left-over. The spinach and cheese would bring a lot of flavors to it. Thanks Chris.
