
One of my favorite things to make with pulled pork other than sandwiches is BBQ Nachos.

I like mine with "built from the floor up" as follows:
- White tortilla chips
- iceburg lettuce (save the fancy stuff for salads!)
- Colby jack cheese mix shredded
- pulled pork
- a blend of diced red, green, and white onions
- black olives
- jalapenos
- BBQ sauce (something sweet like Smoky Mountain Smokers or Blues Hog)
- homemade queso sauce with red peppers, cilantro, and BBQ rub (something hot like Dizzy Pig Jamaican Firewalk)

ReplyDeleteI like mine really spicy and on the fresh side: sharp cheddar cheese, raw diced jalapeƱo, diced fresh tomato, maybe a little sweet onion and/or black olives . . . and I enjoy dipping them in various "stuff" like refried beans or guacamole.
Hard to believe, but as much as I like pulled pork and nachos, I've never combined them - I've considered it. I'm not a big sauce user and the thought of pouring it all over the nachos has stopped me. Your's looks delicious and I think if I made up the cheese sauce flavored with a little sauce, it might work for me. Thanks for the link to the engineers site.

ReplyDeleteI like all kinds of toppings, but I need them to be wholly separate from the chips when served-- side by side is okay. Otherwise the chips always get too soggy.

ReplyDeleteWow, these really do look amazing. We love our nachos with everything on them, including pork (or chicken). My husband would think he died and went to heaven if you put a plate of these in front of him......yum!!!

ReplyDeleteI have never had bbq sauce on nachos. I bet they're very tasty. I like chips, cheese, some sort of meat, salsa, avocado and sr. cream. Now really, don't yours sound better? ReplyDeleteI could just have cheese and sour cream on my nachos and be happy! A plate like this with BBQ chicken is a meal - and a deliciously satisfying one at that.
