My local Food City has been killing it with the bone-in, loin pork chops the past few weeks. We picked this pair up last night, seasoned them with
Lane's BBQ SPF 53, and grilled them directly on one of our large Big Green Eggs.
If you haven't had it, Lane's BBQ SPF 53 is a fiery BBQ and grilling seasoning but it isn't ridiculously hot. It brings savory flavor with paprika, garlic, thyme, paprika and the heat is powered by the trio of black pepper, cayenne, and sriracha powder. It is one of Alexis' favorite rubs.

Normally, I would put the rub on 4 to 6 hours ahead of time and allow the chops to dry brine but it was late and I was hungry. We put the seasoning on and went straight to grilling. |

I had already used this same Egg about 2 hours earlier so it didn't take long to get it fired up to 450°f. |

I grilled the pork chops about 7 minutes per side. |

I say "about" because I wasn't really keeping track too closely. |

I like to pull my thick pork chops at 140°f. As you can see from my Thermapen, I went ever so slightly over but not enough to be a big deal. |

I let the chops rest on a cooling rack for 5 minutes. |

Alexis and I enjoyed these with a couple of ears of corn brushed with Albukirky Green Chile Seasoning butter. I hit the chops with a little more of the SPF 53 that I finely ground. So freaking delicious. |
