Cilantro Lime Wings with Habanero Butter

This is one of the dishes that we served at the 2017 Sunshine State Eggfest and at  the campground for our Egging friends at the 2016 Eggtoberfest.  You can substitute our NMT All Purpose Chicken Rub but I like the Chicken Scratch just a bit better in this recipe.

Cilantro Lime Wings with Habanero Butter

Ingredients

Instructions

  1. Prep the wings.  Use a sharp knife to separate the wings into drummettes and wingettes. Save the wing tips for stock or discard.  Place the wing pieces in the marinade and refrigerate for 6-8 hours.
  2. Set up your grill for direct heat at 350-400°f.  When grilling wings direct, I prefer to use a raised grate so the wings aren't as close to the fire.
  3. Season the wings.  Remove the wings from the marinade, shake off the excess, and discard the marinade.  Season the wings liberally with the Chicken Scratch.
  4. Make the sauce.  Melt the butter over low heat. Stir in the habanero sauce and garlic.  Taste and add salt to taste, just a pinch or two.
  5. Cook the wings.  Grill the wings for 12 minutes then flip and cook another 12 minutes. Check the internal temps to make sure they are at least 175°f.
  6. Sauce the wings.  Toss or dip the wings in the sauce.  Return the sauced wings back to the grill and cook long enough to set the sauce on the wings, another 5-10 minutes.  
  7. Remove and serve.  I like to dip my wings a second time right after they come out, just for a little more "zing".  Serve with a grilled lime wedge.
Trinidad Extra Hot Habanero Sauce
For the Sunshine State Eggfest, I used Trinidad Habanero Extra Hot Pepper Sauce because I couldn't find the Yucatan Sunshine Habanero Sauce that I've used in the past.  The Trinidad is a little hotter, I like the sting that it brings.
In testing, we used our NMT All Purpose Poultry Rub but at the Eggfest, I used Thunderburd Chicken Scratch because Rhonda had it on hand.  Great choice!

Notice the bits of habanero chiles in the sauce.  One ounce of sauce to a stick of butter is pretty mild. I like right at a 1/4 cup of hot sauce to a stick of butter, but that's a personal preference.  Just like everything, taste and adjust it to your own palette.

If you look closely, you can see those red bits of habanero have adhered to the wing.

Thunderbird Chicken Scratch GIVEWAY!

I liked that Thunderbird Chicken Scratch so much that I ended up ordering a 6-pack of it before we got back to Tennessee from the Eggfest.  Thunderbird is a food truck in Nashville serving up kick ass wings and other stuff.  Good fires, sweet smoke, and the Chicken Scratch rub is the center of it all.

You can see the flavor in the rub and in the ingredient list. There is a LOT of flavor action going on in there with the peppers, chiles, sugar, and salt.  I especially like the apple cider vinegar powder, POW that gives it a unique tang.  This would be good on way more than chicken.
