Prime Ribeye Steak with Shiitake Mushrooms and Asparagus with Hollandaise

  2. The cut of meat you go to the store to buy for the cook out is never the one on sale.
  3. Trying to "grill before the storms hit" is a sure fire way to make it rain instantly.
Number 3 was the one that got me last night.  A major storm system was crossing Tennessee and I thought I had time to quickly grill a steak.  Of course, the grill is hardly preheated when the cold rain drops started pelting the deck so I pulled the grill back under the gazebo to hide out from the rain.

Alexis was at Food City and picked me up a prime Certified Angus Beef ribeye (they are a sponsor but this isn't a sponsored post).  I had some leftover shiitake mushrooms and a half a bundle of asparagus in the fridge.  I thought about doing those two together in a stir fry side dish but went this route instead.

Char-Broil Kamander kamado grill is a low cost option for grills like Big Green Egg
Today I was using the Char-Broil Kamander kamado grill.  They are a sponsor and this is the first kamado they have come out with since I partnered with them.  At a MSRP of $349 it's a low cost kamado and I expected to have performance issues but it actually works surprisingly well so far. I'll still be using all types and brands of kamados but I've added this one to the fold.



The rub was leftover from this past weekend's Eggfest.  It's just kosher salt, coarse ground pepper, granulated garlic, crushed dried onion (not onion powder), ancho chiles, and cayenne pepper.  

For the shiitake mushrooms, I just sauteed them in a few tablespoons of butter and avocado oil for about 8-10 minutes.  I seasoned them with several big pinches of the beef rub and about 1 teaspoon of kosher salt.  Then I whisked in 2 teaspoons of corn starch into 1/2 cup of beef stock and added that to the pan.  I let that simmer for about 3 or 4 minutes until thickened.

For the asparagus, I just drizzled oil on them, tossed them around to coat and then seasoned them rather heavily with the beef rub.  I put them on a small sheet pan and let them fire roast while the steak cooked.  I made the Hollandaise sauce ahead of time and kept it warm in one of those fancy insulated cups.

The steak was a 1 pound prime Certified Angus Beef ribeye so I just let it so it's thing.  I tempered it by letting it sit out at room temperature for an hour.  Then I seasoned it on both sides with the beef rub and put it on the grill at 550°f for 4 minutes per side.

After the 4 minutes, a temp check with my trusty Thermapen showed it was only about 110°f so I just shifted the Kick Ash Basket to the right, the steak to the left, and shut the lid to go indirect for a couple of minutes until I hit 125°f.  
Note:  The right Kick Ash Basket for the Kamander is the same one for the Vision.  I now have that  one but here I was still using the Kick Ash Basket for a Large BGE, so it left a lot of room to do this.
