Non Recipe Post: I think I need professional help

I had meeting in Nashville yesterday which meant
  • a 3 hour drive there
  • a 4+  hour meeting in an old State institution built in 1923 for people with developmental disabilities
  • a 2 1/2 hour drive back (wasn't snowing on way back)
Since I was going to be home late, I wanted something easy for dinner like beef burritos.  I asked Alexis to swing by the store for tortillas so I wouldn't have to make them.

"You know, while you're there, pick up some taco seasoning too," I added driving on the curvy salt laden highway, "I don't feel like making that either."

"Might as well pick up packaged Mexican rice, too," I went on and then laughed  "Dang, I'm not actually making anything, I should just have you drive through Taco-Bell and order 4 beef burritos!"

As I was making the burritos I decided I wanted a spicy cream sauce, so I made that and a side of pinto beans.



So for my "quick and easy" dinner, it took almost an hour and I STILL managed to mess up 4 pots and a bunch of accessories.  Sigh.

Weekend Plans
I am finally going to do a brisket post.  Someone mentioned that I have never posted about that although I have shown the results.  I have a brisket in the fridge that I'll be cooking either tonight or tomorrow.    My brisket process is backyard style (not comp) and based on Chris Lilly's with other influences and an injection.  I hope to have that post up maybe as early as Sunday.

  1. I hate when my "lazy" meals turn into a multiple pot session that requires an hour of clean-up! The burrito looks great. I've been playing with ideas for a spicy cream sauce, and haven't found anything that is making me happy. I'd love to know what you did for yours.

  2. Every now and then a bit of packaged food won't hurt you. Oh, our time's up. That will be $100 and I'll see you next week at the same time.

  3. That's the beauty of convenience products. While we may cook from scratch most of the time there's always the occasion where they do help and though it may take messing up some pots, it's still gotta be better than drive through, right? If it makes you feel any better, tonight I was tired or lazy, not really sure which. Opened the fridge, saw some salsa, leftover chicken and a can of biscuits I bought to make something else with but never did that needed to be used. So I pressed out the biscuits into mini pizza dough, topped with the salsa, added some pre-shredded cheese which I never buy but bought the other day for some reason, sliced up the chicken, fried & chopped a couple of pieces of bacon, sauteed some onion in the fat, added those to the top, more cheese & drizzled on some bbq sauce & more cheese. 1 skillet 1 silpat later, dinner! I'll redeem myself with from scratch chicken and dumplings tomorrow. :)

  4. That sounds like me when I enter the kitchen! Even if it's an "Easy" recipe...I end up dirtying all my pots. I have no idea how it happens.

  5. You are extremely lucky!!! YOU were in a STATE INSTITUTION for people with developmental disabilities and THEY LET YOU WALK OUT?!?!?!?! Hahahahahaha....if I were you, I'd be hustling over to buy lottery tickets poste haste! Extremely lucky, indeed!

  6. I've done that same thing. And then have to laugh at myself for spending more money, dirtying pans .... I should have just gotten carry out. I've been buying these frozen crab cakes at Costco. 20 minutes to bake, serve them on a bed of greens and some vinaigrette. Usually just a whisk and bowl fall prey to the madness.

  8. I'm going to school to be a counselor so I know all too well about those old school institutions for people with developmental disabilities :( That's alot of driving in one day!!! And you crack me up, your quick meals taking an hour and dirtying up the dishes. Great food takes time!! How did you make that spicy sauce on top?? Looks delish! I'm excited about the brisket post... which I'll be reading soon and very soon :)
