ABT Pizza

No recipe needed for this one, it's just an idea that you can run with on your own.  Take this and riff on it - pizzas that use sliced ABT's (bacon wrapped, cheese stuffed jalapenos) as a topping.


Brick oven pizzeria's like Brixx Wood Fired Pizza or Hard Knox Pizza are all the rage the past few years.  Well the Big Green Egg is not only a grill and smoker, it's a great wood fired oven right in my back yard!
I smoked a dozen ABT's on my Smoke Hollow Smoker.  I only needed 6 but they have a 50% "quality control tasting" attrition rate.

First Alexis made a plain pepperoni pizza for Brett and Trevor.

Beats delivery.

Sliced the ABT's.  They HAVE to be cold or they won't slice clean.

Topped with the ABT slices and 4 oz of browned chorizo.

The fiery belly of the beast.

Proof of concept.
The idea of adding browned crumbled chorizo to our normal ABT pizza was one of those things where the sum of the parts was less than the ingredients on their own.  The ABT slices ROCK on their own on pizza.  Chorizo ROCKS on it's own.  But the two together on one pizza were a little distracting from each other.  

But you HAVE to try an ABT pizza some time.

  1. First of all, your pizzas in general look delish and I bet they are great on your grill. Second, I love jalapeno's or anything spicy on my pizza so this is right up my alley. It sounds great!

  3. The ABT pizza looks amazing, Chris! I can see how the ABT's would compete with the chorizo. although I love them both.

  4. So you'll never believe this, but I just made a pizza that was jalapeno popper inspired - I just haven't posted it yet! Although I will say, yours looks way better. I love that you actually made the ABT's and then put them on the pizza. YUM! I'll definitely be trying this next time!

    And I like how you added at the end, that the "two [ABT's and Chorizo} rock on their own, but together... a little distracting."

    You saved me from wasting some perfectly good and freaking delicious Mexican chorizo!

    You could and should sell the ABT Pizza idea to the big boys (Pappa John's, et. al.)! 'Course they'd just ruin it.

  11. I'm going to put this one on the list for football season. I'll make a big batch of ABTs for the early game and reserve a few for pizza for the late game or the Monday night game - perfect!

  12. Love that you've done the pizza on the grill. We tried it once with little success. Even had the pizza bricks. I think we'll leave it to the masters like you Chris.

  20. @Dr Zibbs - No, because I did them indirect, the heat source was an offset firebox, not directly under the bacon.

    You could do the same in a grill, just bank the coals on the sides of the grill and leave a void or gap in the middle. Cook the ABT's over the gap, lid closed.

  22. OMG......I somehow misssed your original ABT post and just went and checked it out. Insane! I've never heard of them before but ABT's AND chorizo on pizza?? And I assume it's just your favourite pizza sauce and whatever cheese? I have to make this. We were grocery shopping yesterday and our store happened to have these gorgeous, bigger than normal jalapenos. I wish I had bought some now.
