Huevos Con Chorizo

I'm typing this with a wrapped ankle, a grotesquely swollen big toe, and a bruised ego.

I was working out this afternoon doing what we call a "stations workout" which mixes up various exercises into 1 minute sessions that you repeat over and over. The idea is you don't have time to get bored or too tired at any one thing. Plus you can always make yourself go "just one minute longer".

For example today was
1 minute - heavy bag workout (kicks/knees/punches/elbows to a large padded bag)
1 minute - core (variety of push ups, crunches, planks)
1 minute - weights (variety of dumbell routines - remember the dumbell)
1 minute - aerobic (stationary bike/jump rope)
1 minute - kata (memorized moves like you see in a martial arts demo)
Repeat

I was only 16 minutes into the workout and doing a move I like to do when sparring. It's an intentionally missed right leg spinning hook kick (opponent steps back thinking "Ahh, I dodged it!") but I land on with the right leg in front and go right into a left back leg round kick to the body and jab/cross punches to the head.

Unfortunately, this time, I over-rotated just a "beeeeeet too much" and said right foot landed on one of the dumbells to the side.
Dumbells are round.
They roll.
And all of my weight was on top of one.
Off balance.
Yeah.

So my ankle rolled to the right and then as the dumbells rolled out from under me and my momentum carried me forward, my right big toe dug into the padded floor, buckling under my full weight. I'm pretty sure that I looked like one of those cartoon characters flailing around violently in mid-air but not going anywhere. I wish I had a video of it because I'm sure it look hilarious.

Point being, if you're ever in a fight with me, you're probably better off not trying anything offensive or defensive. Just give me time and I'll take my own ass out! ;)

Anyway, it's all good because 1) I can laugh at myself and 2) I had the best breakfast burrito ever this morning. And I did it without hurting myself!

Huevos Con Chorizo

Ingredients
10 ounce Chorizo sausage bulk
1/4 cup Red onion diced
1/4 cup Green bell pepper diced
10 ea Egg
2 teaspoon Heavy cream
6 ea Flour tortillas taco sized, not the big burrito ones
8 ounce White Mexican Dipping Cheese El Viajero brand
6 ounce Milk
1/2 cup Cheddar shredded
1 cup Salsa

Instructions
Brown the sausage, onion and pepper in a saute pan over medium heat for about 5 minutes, until the chorizo is cooked through. We used Cacique brand of pork chorizo today and I thought it was some of the better chorizo I've had in the short time I've been using it. I also got some of their beef chorizo, which I've never had, so I'm really looking forward to using that somehow.

While that is cooking, combine the white Mexican Dipping Cheese and milk over low heat to make a queso sauce. The El Viajero brand can be found at Walmart but you can use any other queso sauce recipe that you have, if you want to make your own from scratch.

Whisk the eggs and cream together. Add the egg mixture to the saute pan with the chorizo mixture and cook like scrambled eggs. (Didn't say it was pretty, just delicious!)

Warm the salsa in a small sauce pan.

Divide the egg mixture between the tortillas. Roll each tortilla up and place seam side down, either in broiler-safe individual serving plates or on a shallow roasting pan. Top with the queso sauce and shredded cheddar and broil until the cheese starts to brown, roughly 30 seconds.

Top with the salsa, garnish with whatever you like (maybe cilantro, black olives, more shredded cheese) and serve.

I am typing with both hands, but my mind is on cold meds, and my stomach, well it is in the hands of a flu I believe, so I will have to admire this wonderful meal in thought only...hope you heal fast, and dancing on bar bells is not a sport...stay away from the Rocky marathon on New Years, warning, no watching Rocky...

  4. Ouch! Ouch! and Ouch again!!!! Damn, you are making my ankle and big toe hurt too, just thinking about your need to duke it out with a dumb bell. Seriously, hope you are back to your 1-minute work outs soon. I know that's got to hurt.
    The perk for your foodie friends is that you are probably, hopefully going to cook more. :-)

  7. The breakfast burritos look absolutely wonderful! I'm so sorry to hear about your accident. I sure hope you haven't done any major damage. I don't think there is much that can be done for a broken toe but be very careful about the ankle. I broke two toes in a kick boxing move a couple years ago when a table had been moved a couple inches from where it normally sat, and then there was another broken toe when I somehow dropped a dumbell on it - yes it's all comical imagining what we might have looked like as it happened but there's nothing at all comical about how much it hurts!
    My prescription for tonight - Take 1-2 cold beer(s) every hour. Email me in the morning for further instruction.

  8. One of the most amazing things I've ever eaten was a chorizo calimari. Squid marinated in chorizo....I've never quite figured out how it was done.

    I love Dave's comment to this. LOL. I haven't worked out since I hurt my back in September. And now I'm afraid to go back to the gym because of the flu epidemic. I'm anxious to go back next week. I've worked out for 10 years and this is the longest I've gone without. So far I've not gained weight (keeping fingers crossed) Merry Christmas Chris

Sounds like something I would do, I think the stupidest thing i've done is step off a curb while running, but not quite far enough and catch my foot in the sewer grate and fell in a very ungraceful pile in the middle of the road! Nothing is more embarrasing than having cars stop to ask if your ok!

    The buritto looks delicious, something I would definately enjoy!

  15. Chorizo con huevos is pretty much a staple around here (or is it stable. No, I think it's staple). Yours looks and sounds delicious...enough to make me cook some up for a late lunch, actually. And while I do like the Cacique pork brand, I don't care for the beef. It has sort of an "off" flavor to me...I'd be interested to know your take on it. Do you have a Mexican grocer around you? Cuz that is where you find the BEST chorizo!! ...or else make it yourself ;)

    I've done a fall and it was like a cartoon.. I'm glad that you're ok. but DUDE!!! you add purple onion and green bell peppers to Chorizo.. would never have thought of doing that.. love Chorizo and eggs!!! actually, I will be making Chorizo beans later this afternoon! talk to you soon!
